Look what I tripped over and found by accident....

Yesterday, while I was posting my pictures, I though I'd better
check to make sure I was remembering the title to my song.
When I started looking around for the lyrics, this little video popped up.
I was so surprised to see it was sung by a little girl with Type 1 Diabetes.
She does such a great job and it tells her story, as well as ours, very nicely. I thought I'd share it with you.

Friday's Fabulous Family Recipe

This lovely recipe is so easy and child-friendly, that I knew I must it share it with you.....
in case you might be inclined to whip up some delicious home-made cookies
for your family this weekend.

I do want to add this disclaimer: it's not exactly a perfect fit for a family with
many children as I doubled this recipe and it still only made EXACTLY
3 dozen. My children could eat 3 dozen before they were completely
cooled from baking. It uses LOTS of peanut butter
(because there is no flour in this recipe)
so it's a tad bit expensive too, unless you get a good deal on peanut butter
at the grocery store.
Nevertheless...these are so quick to make and DELICIOUS to eat!!

Peanut Butter Chocolate Chip Cookies

Start by preheating your oven to 350'.

Then, gather together these four ingredients, pictured below:


You will need:
1 cup creamy peanut butter
1 cup sugar
1 egg, lightly beaten
1/2 cup miniature semisweet chocolate chips
(as you can see, I used the regular size chips)

Remember: THERE IS NO FLOUR IN THIS RECIPE!!

In a mixing bowl, combine the peanut butter, sugar, and egg. Stir in the chocolate chips.
The batter will be stiff!!



Scoop level tablespoonfuls and roll into balls. Place on UNGREASED cookie sheets.



Flatten with a fork.

of my life like the professional that she is. She is adept at everything I ask her help with, and she has the MOST cheerful disposition.
No, I'm afraid I cannot hire her out, no matter the price.)



Bake at 350' for 15-18 minutes or until browned.
Note: As I mentioned before, I doubled the recipe and ended up with exactly 3 dozen.
I might triple or even quadruple it next time.
Yummy, yummy, YUMMY!!

Saturday's Super Mom

There are several mom's in my mind whom I would like to share with you
that I believe you will find as inspiring as I do.
This first lady I do not know personally, but I've been following her blog
for some time and have always enjoyed the things she talks about.
Though I don't agree with her on everything, I think she is amazing
and has learned how to let the Lord have His way in her life.
Would I like to have as many children as she? Ummmm....no.
But she still inspires me and gives lots of encouragement to women trying to live their lives for Christ and be the kind of lady God created her to be.

Friday's Fabulous Family Recipe



This recipe came to me from a friend (Thanks Jen!!) a long time ago, and I have modified it ever so slightly for our family.
My children find this quite yummy, especially our 16-month-old, who eats gobs of it!!


Tator Tot Casserole

1 lb. ground turkey
2 large cans (28 oz.) green beans
1 can (15 oz.) cream of mushroom soup
1 can (15 oz.) cream of chicken soup
1 bag (32 oz.) tator tots

Let your oven preheat to 425' while you brown your ground turkey, seasoning to taste. Dump your turkey, green beans, and soups into a 9 x 13" baking dish. Stir all together until well blended. Pile on frozen tator tots and spread to cover the rest of the casserole. Bake uncovered for about 25 minutes until tots are browned nicely and it's bubbly hot. Let cool before you serve, unless the wonderful smell overtakes you and you can't wait!!

I'm serving this tonight with fresh, sweet, juicy strawberries paired with
some fabulous chocolate whipped topping!!

Note: You can double the amount of turkey if your family is particularly carnivorous....mine is not.
And if you are really amazing and have a garden, you can of course substitute
your own garden fresh green beans or you can use frozen also.
